Chewy Oatmeal Raisin Cookies
CHEWY OATMEAL RAISIN COOKIE 🍪. Thinking of what to give for Christmas to friends / colleagues that you don't really like but wanna be polite? MAKE DIZ YUMMY EASY COOKIES that's chewy but also crunchy at the same time?! Lets you do your bare minimum in the name of Christmas giving, produces bulk random gifts and allows you to claim credit for minimal effort. HAHAHAHAHA. I'm kidding, if you receive this you are liked by me. Or… maybe not as much. 🤷♀️.

I've also come to realise that as an adult, you no longer get conned by raisins thinking it's chocolate chips. hehehe. and you make the conscious decision to EAT raisin cookies.

CHEWY OATMEAL RAISIN COOKIES
Makes about 20 medium cookies.
Prep: 30 mins
Bake: 10-15 mins
110g butter, room temperature
50g brown sugar
60g white sugar
1 large egg
1 tsp vanilla extract
125g plain flour
1/2 tsp baking soda
1/4 tsp salt
3/4 tsp cinnamon powder
150g rolled oats
80g raisins
1. Preheat oven to 180'c
2. In a stand mixer on low speed, cream butter and all the sugar till smooth. Add in an egg and vanilla extract and mix till incorporated.
3. Add in the dry ingredients (flour, baking soda, salt, cinnamon) and mix till incorporated. Then add in oatmeal and raisins and continue to mix well.
4. Using an ice cream scoop (or 1.5 tbsp), scoop your cookie dough onto a baking tray lined with parchment paper. Roll it into rounds with your hands and then flatten it gently with your palms. Leave some space between each cookies although these doesn't spread much.
4. Bake for 10-12 mins or until brown.
